Le Hatley at Manoir Hovey

Overlooking Lake Massawippi in Québec’s Eastern Townships, Le Hatley offers a refined dining experience rooted in the region’s landscape, ingredients and culinary traditions.

Located at Manoir Hovey, the restaurant is led by Executive Chef Alexandre Vachon, whose seasonal cuisine draws on exceptional ingredients sourced from local farmers, foragers, fishers and artisans. His cooking reflects the character of Québec while incorporating contemporary technique and a strong connection to the natural surroundings.

That sense of place extends into Le Hatley’s wine program, led by Sommelier and Wine Director Joanie Metivier. With 905 selections and an inventory of approximately 8,000 bottles, the cellar offers considerable depth and breadth, moving across the world’s major wine regions while also embracing emerging producers and distinctive selections.

Canadian wine accounts for approximately 10 percent of the list, giving the program a meaningful domestic presence alongside its extensive international collection. The result is a list capable of supporting both the restaurant’s Québec-focused cuisine and a broader exploration of the world of wine, with selections that range from established appellations and mature vintages to lesser-known regions and producers.

The strength of the program is ultimately in how it complements the kitchen. Metivier’s selections provide a global perspective while remaining responsive to Vachon’s ingredient-driven cooking, allowing the wine to become an integral part of the dining experience rather than simply an accompaniment. Its Vine Award recognizes a program distinguished by its scale, diversity and thoughtful connection to the restaurant’s sense of place.
